Lett-uce get excited this week from the superpowers of this super salad with pomegranates! Pomegranates were eaten by Aphrodite, the goddess of love, so why not you? This salad is so pretty, so easy, and needs minimal dressing because the peppery combination of the arugula with the pomegranate arils, berries and pear is just amazing.
Note: If you don’t have a veggie spiralizer, run a vegetable peeler down the length of the vegetable to create long strips or a julienne peeler to create a thinner, spaghetti-like noodle.
Serves 4-6
1 package baby arugula
1 pear, spiralized
1/2 pomegranate, arils removed for salad (arils are the seed pods inside the pomegranate)
1 cucumber, spiralized
1 pint blueberries
4-6 tablespoons roasted pumpkin seeds
2 tablespoons basil infused olive oil
4-5 tablespoons balsamic vinegar
Salt and pepper to taste
Add all ingredients into salad bowl
Combine with dressing and serve this delicious superpower salad with pomegranates!
